Would you like to grow your own food but don’t know where to start? Don’t have any space? We have two words for you: Potatoes. Containers.

All you need is a container or barrel, one or two organic potatoes (from the grocery store or co-op), and soil to get started. Organic potatoes are important because they haven’t been treated with chemicals that prevent sprouting.

Fill the pot to within 5” of the top, layer in the potatoes, and top off with another 4” of soil.  If your pot is 18” or less in diameter, one potato is sufficient.  You don’t want to overcrowd.

Water your potato plant, but not so much that the soil is sodden.  In a few weeks the green leaves will emerge and eventually grow into a pretty bush-shaped plant with white flowers.  Keep on watering, especially in hot, dry weather.

Eventually the leaves and stems will turn brown and wilt.  This is the signal that harvest time has arrived.  Gently work into the soil, looking for your buried treasure.  Enjoy the fruits … uh, we mean tubers .. of your labor!
